- ½ cup 1 stick / 115g unsalted butter
- 1 cup 125g all-purpose flour
- 1 cup 200g granulated sugar, divided
- 1 tablespoon baking powder

- 1 cup 240ml whole milk
- 1 teaspoon pure vanilla extract
- 4 cups sliced peaches — fresh peeled or 2 × 15oz cans (drained, juice reserved)
- 1 tablespoon cornstarch

- 1 teaspoon fresh lemon juice
