  • 2 –3 lbs beef shank bone-in, cut into 1.5–2 inch thick pieces
  • Kosher salt and black pepper
  • 2 tbsp olive oil
  • 1 onion diced
  • 2 carrots diced
  • 2 celery stalks diced
  • 4 garlic cloves minced
  • 2 tbsp tomato paste
  • 1 cup dry red wine or substitute extra broth
  • 2 –3 cups beef broth
  • 2 bay leaves and a few sprigs of fresh thyme or rosemary

Notes
