Method
- Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
- Soak breadcrumbs in milk for 5 minutes to form a soft panade.
- In a large bowl, gently combine ground chicken, panade, egg, Parmesan, garlic, onion, parsley, salt, pepper, and red pepper flakes. Mix just until combined — do not overwork.
- With slightly wet hands, roll mixture into 1.5-inch (golf ball-sized) meatballs. You should get about 20.
- Arrange the meatballs on the prepared baking sheet, ensuring there is space between each one.. Bake for 18–20 minutes, until lightly golden and cooked through (internal temp of 165°F/74°C).
- Warm your sauce in a large skillet or pot. Add the baked meatballs and simmer gently for 10 minutes, spooning sauce over them occasionally.
- Serve hot, garnished with extra Parmesan and parsley.
Notes
Freeze uncooked, shaped meatballs on a tray, then transfer to a bag once solid — they’ll keep for up to 3 months. Bake from frozen, adding 5–7 extra minutes.
