Ingredients
  

  • 800 g potatoes peeled and cut into even chunks (Maris Piper or King Edward work best)
  • 50 g butter plus extra for the mash
  • 400 g white fish fillet cod, haddock or pollock, skinned
  • 200 g smoked haddock fillet skinned
  • 150 g raw peeled prawns
  • 600 ml whole milk
  • 1 bay leaf
  • 40 g plain flour
  • 100 g mature cheddar grated (half for the sauce, half for the top)
  • 2 hard-boiled eggs quartered (optional, but traditional)
  • Handful fresh parsley chopped
  • 1 tsp English mustard
  • Salt black pepper, squeeze of lemon

Notes

For the best flavor, use a combination of white fish and smoked haddock. Make sure the fish is cooked just until tender, and bake until the potato topping is golden and crisp.
