  • White granulated sugar800 g – 1 kg

🌿 On Choosing Your Flowers
Harvest elderflower heads on a dry, sunny morning — ideally between 9am and noon, when the aromatic oils are at their peak. Avoid washing the blossoms: much of the delicate flavour lives in the pollen. Simply shake gently to dislodge any insects. The flowers should smell intensely of honey and muscat — if they smell faintly unpleasant or “cat-like,” leave them; they’re past their prime.
