- 1 pound elbow macaroni
- 1 cup mayonnaise full-fat works best for creaminess
- 2 tablespoons white vinegar
- 1 tablespoon yellow mustard
- 1 tablespoon sugar
- ½ teaspoon salt plus more for the pasta water
- ¼ teaspoon black pepper
- 3 hard-boiled eggs chopped
- ½ cup celery finely diced
- ½ cup red bell pepper finely diced
- ¼ cup red onion finely minced
- 2 tablespoons sweet pickle relish
- Paprika for garnish (optional, but I always add it)
